Chicken Curry Bake Recipe

1 tablespoon
1 large
2 cups
1 cup
2 cups
1 tablespoon
1 can
1/2 can
1/4 teaspoon
1/2 teaspoon
whole chicken breast, boneless
olive oil
onion, chopped
zucchini, sliced
mushrooms, sliced
apples, cubed
curry powder
cream of mushroom soup
ground black pepper

Oven Temp: 350°
Recipe Cooking Time:60 minutes
Pan Type: 2 quart casserole

Chicken Curry Directions

Preheat Oven.

Cut chicken breast in half and put in bottom of baking dish and season with salt and pepper.
In a skillet sauté the chopped onion, zucchini and mushrooms in olive oil until light brown.
Pour browned vegetables over the chicken.
Layer cubed apples over the chicken and vegetables.
In a small bowl mix mushroom soup with 1/2 can of milk and curry powder.
Pour curry soup mixture over the chicken and vegetables and bake chicken curry uncovered for allotted time.
Serve baked chicken curry over rice along with your favorite warm bread.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
