Chicken Caribbean Recipe

1 large
1 tablespoon

3 cloves
1/2 teaspoon
1/2 teaspoon
1/2 teaspoon
1/8 teaspoon

1 large
1 – 16 ounce can
2 tablespoons
1 tablespoon
2 teaspoons
2 teaspoons
lime, juiced
lime peel, grated
orange juice
garlic, minced
ground ginger
ground cinnamon
salt
cayenne pepper
chicken breast, boneless, skinless
sweet onion
ready cut tomatoes
molasses
olive oil
water
cornstarch

 

Stove Temp: medium
Recipe Cooking Time: 45 minutes
Pan Type: skillet


Chicken Caribbean Directions

In a plastic bag combine, lime juice, lime peel, orange juice, minced garlic, ginger, cinnamon, salt and cayenne pepper.
Seal and shake to mix caribbean marinate.
If chicken breasts are whole, cut them into halves.
Place the chicken in the plastic bag.
Seal bag and shake to coat the chicken with caribbean marinate.
Place chicken in the refrigerator for 8 hours or overnight.
Turn bag occasionally to marinate the chicken.
When ready to cook, remove chicken from refrigerator. Remove chicken from the bag and put on a plate, reserve the caribbean marinate.
Heat olive oil.
Add the chicken caribbean.
Cook chicken 3 minutes on each side.
Transfer chicken to platter.
Add the onion to the skillet, cook until tender.
Add tomatoes, molasses and the reserved caribbean marinate.
Bring to a boil.
Add the chicken.
Reduce heat to low.
Simmer uncovered 30 minutes.
Remove chicken from skillet.
Mix the water and cornstarch.
Pour into skillet.
Turn heat up to medium and cook caribbean sauce until it thickens.
Pour sauce over the chicken and serve.
Great with rice and warm rolls.
