Almond Breaded Chicken Recipe

chicken breast, boneless, skinless
sliced almonds
oil for frying
chicken broth
soy sauce
shredded lettuce
slivered almonds, toasted
green onions, sliced

Oven Temp: 375°
Recipe Cooking Time: 3 to 4 minutes
Pan Type: large skillet

Almond Breaded Chicken Directions

Slice the chicken breast in half to make 8 thin breast pieces.
Sprinkle salt on breast.
In a medium shallow dish combine the panko and sliced almonds.
Place the flour on a plate.
In a small shallow dish beat the eggs until fluffy.
Dredge one piece of chicken at a time into the flour.
Then dip into beaten egg and then coat with panko mixture.
Heat the oil.
Fry breaded chicken in hot oil for the allotted time or until golden brown.
Remove from oil and drain on paper towels.
Layer shredded lettuce on serving plate.
Cut breaded chicken into bite size pieces and layer on lettuce.
In a small saucepan combine the chicken broth, cornstarch, mirin (Mirin is Japanese sweet cooking wine) and soy sauce.
Bring mixture to a boil, reduce heat and cook until thickened.
Pour sauce over top of chicken. Sprinkle chicken with the toasted almonds and green onion.
Serve almond chicken immediately.
Great served with rice.

Recipe Serves: about 6

Note: Mirin is a sweet cooking rice wine, easy to find. Panko is Japanese bread crumbs, both can be found in the oriental food section at your local grocery store.
