Boneless Veal Shoulder Roast Recipe

4 – 6 pounds
1/2 teaspoon
1 teaspoon
1/4 teaspoon
1/4 teaspoon
boneless veal roast
celery salt
dried dill weed
onion powder


Oven Temp: 325º
Recipe Cooking Time: 2 to 3 hours
Pan Type: roaster pan

Veal Roast Directions

Preheat Oven.

Mix the spices in a small bowl.
Put veal roast fat side up in shallow roasting pan, on a rack.
Rub the spices on the veal roast.
Bake uncovered in oven until meat thermometer reaches 165° when inserted in the thickest part.
Remove veal roast from oven and cover with foil.
Let stand for 10 to 15 minutes before carving.
Temperature will rise to 170°.

Slice and serve with your favorite vegetable and potato.

Recipe Servings: 3 to 4 servings per pound

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
