Rock Salt Prime Rib Roast Recipe

6 - 8 pound
5 pounds
1 teaspoon
1/2 teaspoon
1/2 teaspoon

Prime Rib Roast, bone in
rock salt
garlic, minced
salt
coarse ground black pepp

Oven Temp: 350°
Cooking Time: 25 to 30 minutes per pound
Pan Type: roaster

Preheat Oven.

Open the rock salt and lay in bottom of pan.
Place meat rib side down on the rock salt.
The ribs take the place of roasting rack.
Rub the minced garlic on the meat.
Sprinkle with salt and pepper.
Place a meat thermometer in the middle.
Bake for the allotted time or until meat thermometer reaches 130°.
Remove from the oven, cover and let set for 20 to 30 minutes or until temperatures reache desired doneness per note below. Discard the salt.
Crack any salt off of roast before you slice it.
Using a sharp carving knife, slice meat across the grain for serving.

Note: The best way to pick a great prime rib in my opinion is go to the meat counter and tell the butcher how big a roast that you want.
You should plan on 1 pound of bone in per person.
Tell the butcher that you want your prime rib roast with the bone in tact.
Then smile nicely and ask him to pick you one just like he would pick for himself or herself.
Then my friend you will have a great melt in your mouth prime rib.
Take meat out when meat thermometer inserted in the middle reaches 130° for rare, 140° for medium and 150° for well done. I always go for 140°, then cut the ends for the folks who like their meat well done.
Serve with your favorite side dish.

1 Heaping cup of encouragement

2 large attitude
Lots of hugs in assorted sizes

Cream encouragement and compassion together.
Add hope, love, and faith.
Mix thoroughly until smooth.
Slowly add the unbeaten attitude.
Batter should be firm but not unyielding.
Knead gently.
Roll in hugs and cut out to the desired shape.
Add stars for eyes and a kiss.
Bake in a warm oven.
Excellent when shared with a friend.
