Cindy’s Veal Noodle Recipe

2 pound
32 ounces
1/2 teaspoon
1/8 teaspoon
1 clove
1 large
12 ounce bag
1 1/2 cup
1 cup
chicken broth
garlic, minced
head of broccoli
thin egg noodles
egg yolks
heavy cream
parmesan cheese, shredded


Stove Temp: low
Recipe Cooking Time: 1 ½ hours
Pan Type: large pot

Veal Noodle Directions

Cut veal into bite size pieces, put into pot with the chicken broth, salt, pepper and garlic.
Bring to a boil, reduce heat and simmer until veal meat is tender.
Cut the broccoli into bite size pieces and steam until crisp and tender.
Cook the noodles according to package directions.
In a medium size bowl beat the egg yolks until smooth.
Stir in the cream.
When the veal is tender, add the egg yolk mixture and stir until well blended and heated thoroughly.
Add the noodles, broccoli and cheese.
Gently mix and cook for 5 minutes more.
Serve up veal with noodles and your favorite warm bread.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
