Vegetable Soup Recipe

Vegetable Soup in Green Pottery Bowl

2 – 16 ounce cans fat free beef broth
1 – 15 ounce can ready cut tomatoes
2 medium zucchini, cubed
2 stalks celery, sliced
1 large onion, chopped
2 large carrots, sliced
1 can green beans, drained
1 package chili seasoning mix
1/4 teaspoon cumin
1/4 teaspoon cayenne pepper
1/8 teaspoon salt to taste

 

Stovetop Temp: simmer

Vegetable Soup Directions

In a large soup pot brown the onions, celery, carrots and cubed zucchini, in about 1 tablespoon of olive oil. Sprinkle in the chili seasoning mix along with the other seasonings, stir to mix into the simmering vegetables.
When onions have cooked enough to give them a clear appearence, add in the beef broth, tomatoes and drained green beans.

Bring vegetable soup to a boil.

Reduce heat to low and simmer soup for 45 minutes covered.

Serve vegetable soup along with your favorite crackers.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat.
