Spinach and Squash Soup Recipe

Spinach and squash combined with baby kale turns this soup into an
amazingly delicious superfood dinner. Easy to fix, ready to eat in 30 minutes.

Squash and Spinach Soup.

1/2 cup onion, chopped
1/2 mini sweet peppers, chopped
1 clove garlic,grated
1 cup Baby Kale, chopped
1 cup spinach
1 tablespoon olive oil
4 cups Fat Free Chicken Broth
2 cup Hubbard Squash, pureed
1 Tablespoon Italian spice
1/2 teaspoon Salt
1/2 lb All Natural Venison Sausage (pork sausage)

Recipe Cooking Time:
Pan Type: large soup pot

Spinach and Squash Soup Directions

Combine the venison sausage in a large soup pot along with the olive oil, peppers, onion and garlic. Saute until sausage is thoroughly cooked, Add in the baby kale and spinach, heat and stir constantly over reduced heat until both the spinach and kale have been cooked down. Pour in the chicken stock, hubbard squash and seasonings, heat thoroughly and serve.

Recipe Note:

Spinach and Squash Soup is one of my favorite soups on a cool, rainy day.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
