Cheesy Potato Soup Recipe

Cheesy Potato soup recipe, it doesn't take long to put this delicious and hardy meal on the table. A simple, cheesy potato soup. This soup takes less than an hour to make. You can break up the potatoes with a fork if you want a thicker soup.

2 cups potatoes, diced
1 large onion, chopped
1/4 cup celery, chopped
1 red bell pepper, chopped
1 clove minced garlic
2 cups chicken broth
1/4 teaspoon pepper
1 – 12 ounce can evaporated skim milk
1 cup reduced fat cheddar cheese


Recipe Cooking Time: – 40 minutes
Pan Type: large saucepan

Cheesy Potato Soup Directions

Peel and dice the potatoes.
Chop the onion, pepper and celery.
In a large stock pot, saute the onion, pepper, garlic and celery in olive oil until soft.
Add the potatoes, chicken broth and pepper.
Mix soup well.
Bring potato soup to a boil over high heat, reduce heat; cover and simmer until potatoes are tender, about 15 minutes.
When potatoes are soft, break them up a bit with a fork and add in the milk and cheese, mix until smooth.
Cook over medium heat until thickened.
Ladle potato cheese soup into bowls and garnish with chives.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt.
