Northern Bean Soup Recipe

2 cups

1 large
2 large
1 stalk
1 teaspoon
1 teaspoon
1 tablespoon
8 cups
1 teaspoon
1/4 teaspoon
beans, uncooked
lean ham, cubed
onion chopped
carrots, chopped
celery, chopped
dried basil
Worcestershire sauce


Recipe Cooking Time: 2 hours
Pan Type: large soup pot

Northern Bean Soup Directions

Place northern beans in a colander look through the beans and remove any rocks if found. Wash beans and drain.
Place northern beans in a large stock pot or Dutch oven.
Cover with water and let set overnight or 8 hrs.

Drain and rinse the beans and return to pan.
Add the cubed ham, chopped vegetables, basil, thyme, Worcestershire and second amount of water.
Stir to blend.
Bring bean soup mixture to a boil, reduce the heat to medium-low and cook until the meat is tender and beans are done, about 2 hours.
Add the salt and pepper just before serving.

Note: My niece called me the other day and asked what does it mean to wash and sort the beans? I took it for granted that everyone knew what this meant. Having said that, I think I explained it well enough that anyone can understand. Northern beans get better as they set so be sure to make enough for leftovers.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
