Twice Baked Potatoes Recipe

4 large
2 tablespoons
3/4 cup
1/4 cup
6 ounces
1/2 teaspoon
1/2 teaspoon
1/4 teaspoon
1/4 cup
baking potatoes
1% milk
chicken broth
cheddar, reduced fat shredded
onion powder
ground black pepper
imitation bacon bits

Oven Temp: 350°
Recipe Cooking Time: 1 hour 30 minutes
Pan Type: 9" x 13" baking pan

Twice Baked Potatoes Directions

Preheat Oven.

Wash potatoes and wrap in foil.
Bake for allotted time or until tender when you poke potatoes with fork.
Cool for 1 hour.
Cut a thin slice length wise of each potato and discard potato top.
Scoop out pulp being careful to leave about 1/4 - 1/2 inch in shell so it stays together.
Put potato shells in a baking pan.
Put pulp in a large mixing bowl.
Mash potatoes with electric mixer on medium.
Add to the potatoes, onion powder, salt and pepper.
Beat to blend.
Add butter, milk and chicken broth.
Beat until fluffy and not lumpy.
Stir in 1 cup reduced fat cheese and imitation bacon bits if you like them.

Bake potatoes for allotted time.
5 minutes before end of baking time top with remaining reduced fat cheese.

Recipe Note: Potatoes should be baked for 1 hour the first time and (twice baked) for 30 minutes the 2nd time.
