Mexican Baked Halibut Recipe

"A baked fish dish. You get to choose the heat. Easy on the garlic and pepper for a little heat and extra cayenne pepper for lots of heat! Serve with rice, black beans, warm tortillas and lime Margaritas for a festive meal!"

Mexican Baked Halibut

1 1/2 pounds halibut fillets
1 cup fresh tomato seeded and chopped
2 tablespoons lime juice
1/8 teaspoon ground cumin
1/8 teaspoon cayenne pepper
4 green onions, sliced thin
1 clove garlic, minced
1/4 teaspoon salt
1 tablespoon fresh cilantro, chopped
1 lemon, wedged

 

Oven Temp: 350°
Recipe Cooking Time: 20 –
Pan Type: 9" x 13" baking dish


Baked Halibut Directions

Preheat Oven.

Cut halibut fillets into six serving pieces.
Arrange in baking dish.
In a small bowl combine chopped tomato, lime juice, ground cumin, cayenne pepper, sliced green onions, minced garlic and salt.
Mix well and pour over fish.
Cover and bake for allotted time or until center of halibut flakes easily when tested with a fork.
Remove halibut from baking dish.
Place baked halibut onto serving platter.
Pour sauce over top.
Sprinkle with chopped cilantro.
Serve with wedge of lemon. Great with steamed rice.
