Lighter Choice Chicken Divan Recipe

1 1/2 pounds
1 – 12 ounce can
2 tablespoons
2/3 cup
2/3 cup
1/3 cup
1 tablespoon
1/2 teaspoon
1/4 teaspoon
1/2 cup
chicken breast halves, boneless, skinless
fresh asparagus spears
99% fat free chicken broth
cornstarch
light mayonnaise
skim-evaporated milk, undiluted
reduced fat cheddar cheese, shredded
lemon juice
curry powder
ground black pepper
bread crumbs

 

Oven Temp: 350°
Recipe Cooking Time: 30 minutes
Pan Type: 2 quart baking dish


Chicken Divan Directions

Preheat Oven.

Boil chicken breast until tender, about 30 minutes.
Cut into cubes.
In the meantime steam the asparagus until crisp tender, drain.
Arrange drained asparagus in bottom of pan.
Layer cubed chicken on top of asparagus.
In a small saucepan combine the cornstarch and chicken broth.
Mix well and cook over medium heat until mixture is clear and starts to thicken.
Remove from heat and cool lightly.
Add mayonnaise, milk, shredded cheese, lemon juice, curry powder and pepper.
Mix well.
Pour over chicken.
Sprinkle the top with the bread crumbs and bake chicken divan for the allotted time.

Recipe Serves: 4 – 6
