Chicken Lasagna Recipe

9 uncooked
1 pound
1 medium
1 – 14.5 ounce can
1 – 6 ounce
2 cans
1/2 teaspoon
1 cup
2 teaspoons
2 cloves
1 – 16 ounce
1/2 cup
1/2 cup
2 cups
lasagna noodles
chicken breast ground
onion, chopped
ready cut tomatoes
tomato paste
water
salt
fresh mushrooms, sliced
basil
garlic, crushed
1%   small-curd cottage cheese
egg substitute
grated Parmesan cheese
part skim mozzarella cheese, shredded

 

Oven Temp: 350°
Recipe Cooking Time: 30 minutes
Pan Type: 9" x 13" baking dish


Chicken Lasagna Directions

Preheat Oven.

Boil lasagna noodles according to package directions.
Drain and set aside.
Fry chicken breast in large skillet until no longer pink.
Remove chicken from stove, drain.
Place chicken in colander and rinse with warm water to remove any excess fat. (This does not change the flavor of meat).
Return chicken to skillet.
Add onion, garlic and mushrooms and cook until tender.
Add tomatoes, tomato paste, basil, salt and water.
Bring to a boil.
Reduce heat, simmer for 20 – 30 minutes uncovered.
Mix egg substitute with Parmesan cheese and cottage cheese.
To assemble recipe, put a small amount of meat sauce in bottom of pan.
Top with 3 drained lasagna noodles.
Layer 1/3 of sauce on noodles, 1/2 of cheese mixture, 1/3 of mozzarella cheese.
Repeat layers.
Last layer will be sauce and mozzarella only.
Bake chicken lasagna uncovered.
Remove from oven and let stand 10 minutes before cutting.

For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
