Chicken Enchiladas Recipe

4 cups
1 tablespoon
1 dozen
1 1/2 cups
3 cans
1 small can
1 – 4 ounce
3 cups
1/2 cup
2 cloves
1/4 teaspoon
1/2 teaspoon
1/4 teaspoon
olive oil
fat free flour tortillas
reduced fat dairy sour cream
99% fat free cream of chicken soup
sliced black olives
can diced green chilies
reduced fat cheddar cheese, shredded
onion, chopped
garlic, minced
cayenne pepper

Oven Temp: 350°
Recipe Cooking Time: 30 minutes
Pan Type: 9" x 13" baking pan

Chicken Enchiladas Directions

Boil chicken and chop into pieces.
Place chicken in a large mixing bowl.
In a skillet, saute the onion and garlic in olive oil until tender.
Add undiluted soup, dairy sour cream, olives, chiles, cumin, oregano, cayenne pepper.
(Remove 1 1/2 cups of sauce for top of enchiladas, set aside).
Add the chopped chicken and 1 1/2 cups of the cheese to the rest of soup mixture.

To assemble chicken enchiladas: lay flour tortilla on bread board, put large spoon of chicken mixture in center and roll.
Place in 9 x 13" pan. Repeat until pan is full.
You may need to squeeze tightly and put one across the end to completely fill the pan.
Stir together the remaining 1 1/2 cups of cheese to the reserved 1 1/2 cups of soup mixture.
Spread cheese and soup mixture over the the top of chicken enchiladas.
Bake enchilada recipe uncovered.
Allow chicken enchiladas to set for 10 minutes in pan before serving.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup.
