Black Bean Lasagna Recipe

In the mood for lasagna? This recipe is so easy and good it will blow your mind.
I have always been a strong believer in meat. I love a good steak, so consequently I was not too willing to give this Black Bean Lasagna a try. I will definitely make this for company it was that good.

Black Bean Lasagna Ingredients:

1 – 10 ounce box Lasagna noodles
1 – 16 ounce can Black beans, drained and mashed
1 – 16 ounce can Black beans, drained
1 Tablespoon Olive oil
1 large Onion, chopped
1/2 cup Green bell pepper, chopped
2 cloves Garlic, minced
1 – 16 ounce can Ready cut Italian tomatoes
1 can Italian seasoned tomato sauce
1/4 cup Cilantro, chopped
1 – 16 ounce container Cottage cheese
1 – 8 ounce package Cream cheese, softened
1/4 cup Dairy sour cream
1/2 teaspoon Salt
1/8 teaspoon Ground black pepper
Nonstick pan spray
Salsa and sour cream for garnish if desired


Oven Temp: 350°
Recipe Cooking Time:
Pan Type: baking pan


Black Bean Lasagna Directions

Preheat Oven.

Cook 9 lasagna noodles according to package directions.
Drain well.
Place black beans in a colander and rinse.
Set aside to drain.
In a large skillet cook the chopped onion, chopped green pepper and garlic until tender.
Mash1 can of the black beans.
Add to the onion mixture in the skillet.
Add drained black beans, tomato sauce, tomatoes and cilantro. Stir until heated through.
In a large bowl beat the cream cheese until smooth.
Add the sour cream, cottage cheese, salt and pepper mix well. Spray pan with non stick spray.
Lay 3 noodles down in bottom of the pan.
Top with 1/3 of the bean mixture and 1/3 of the cheese mixture. Repeat layers twice.
Serve topped with salsa and sour cream with our Mandarin Poppy Salad Recipe.
