Linda’s Black Bean Lasagna Recipe

1 – 10 ounce box
1 – 16 ounce can
1 – 16 ounce can
1 tablespoon
1 large
1/2 cup
2 cloves
1 – 16 ounce cans
1 can
1/4 cup
1 – 16 ounce container
1 – 8 ounce package
1/4 cup
1/2 teaspoon
1/8 teaspoon

lasagna noodles
black beans, drained and mashed
black beans, drained
olive oil
onion, chopped
green bell pepper, chopped
garlic, minced
ready cut Italian tomatoes
Italian seasoned tomato sauce
cilantro, chopped
cottage cheese
cream cheese, softened
dairy sour cream
salt
ground black pepper
Nonstick pan spray
Salsa and sour cream for garnish if desired

Oven Temp: 350°
Cooking Time: 45 minutes
Pan Type: baking pan

Preheat Oven.

Cook 9 lasagna noodles according to package directions.
Drain well.
Place black beans in a colander and rinse.
Set aside to drain.
In a large skillet cook the chopped onion, chopped green pepper and garlic until tender.
Mash1 can of the black beans.
Add to the onion mixture in the skillet.
Add drained black beans, tomato sauce, tomatoes and cilantro. Stir until heated through.
In a large bowl beat the cream cheese until smooth.
Add the sour cream, cottage cheese, salt and pepper mix well. Spray pan with non stick spray.
Lay 3 needles down in bottom of the pan.
Top with 1/3 of the bean mixture and 1/3 of the cheese mixture. Repeat layers twice.
Serve with salsa and sour cream with your favorite drink.

Serves: 9 – 12
