Mini Chicken Meat Loaf Recipe

1 pound
1 large
1/2 cup
1/4 cup
1/2 cup
1/2 cup
1/4 teaspoon
ground chicken
egg
chunky tomato. garlic and onion pasta sauce
grated parmesan cheese
shredded mozzarella cheese
bread crumbs
salt

Stove Temp: broil
Recipe Cooking Time: 20 minutes
Pan Type: baking dish


Mini Chicken Meat Loaf Directions

Mix chicken, egg, 1/4 cup of pasta sauce, salt and bread crumbs.
Shape into 6 mini meatloaves and place on baking dish that has been sprayed with vegetable oil.
Place in oven that is set on Broil and cook for 15 minutes or until pink is gone, remove from oven and put remaining sauce over each one of the mini chicken meat loaves and sprinkle with mozzarella cheese.

Place back in oven for 1 to 2 minutes or until cheese is melted.


NOTE: I use extra sauce and cheese; This is quick and awesome. Sure to become a favorite, served with our famous Fried Sweet Mesquite Zucchini.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
