Chicken Spinach Roll Recipe

1 – 10 ounce box
2 cups
2 large
1/4 cup
4 large
1 teaspoon
1 teaspoon
1 teaspoon
1/2 teaspoon
1 – 4 ounce jar
1 – 16 ounce jar
2 cups
frozen spinach
ricotta cheese
eggs
parmesan cheese
chicken breasts, boneless, split
salt
pepper
oregano
garlic powder
mushrooms, drained
spaghetti sauce
Italian blend cheese

Oven Temp: 350°
Recipe Cooking Time: 45 minutes
Pan Type: baking dish


Chicken Spinach Roll Directions

Preheat Oven.

Cook spinach according to package directions and drain well. In a medium bowl beat the eggs, add the ricotta cheese and parmesan cheese.
Mix well and set aside.
Lay chicken on cutting board and cover with a sheet of waxed paper.
Flatten chicken out with a meat mallet.
Spoon spinach mixture on top of chicken and spread out evenly.
Roll stuffed chicken up in jelly roll style and place seam side down in pan.
Sprinkle chicken with salt, pepper, oregano and garlic powder. Top with drained mushrooms.
Pour sauce over chicken.
Bake chicken spinach rolls for the allotted time.
Remove from oven and top with the cheese.
Return to oven and bake until the cheese melts and serve with your favorite warm bread and drink.
