Crockpot Potato Soup

Crockpot Potato Soup recipe, packed with flavor!
It takes 4-plus hours in the slow cooker, but the prep time for this wonderful potato soup is just 10 minutes.
Using a spicy sausage, adds all the flavor, no need for extra spices.

1 lb. Italian sausages
4-6 Yukon Gold potatoes, chopped
1 onion, chopped
1 sweet yellow pepper, chopped
1/4 cup REAL bacon pieces (optional)
2 Tbsp minced garlic (about 3-4 cloves)
32 oz. chicken broth
1 cup baby kale, chopped
1 can of evaporated milk
2 Tbsp flour
1 teaspoon, rosemary
1 teaspoon, parsley

Temp: high
Recipe Cooking Time:
Pan Type: crockpot

Potato Soup Directions

Brown sausage in a sauté pan.
If using link sausage, cut in half lengthwise, then cut slices.
Place sausage, chicken broth, garlic, potatoes, yellow pepper and onion in slow cooker.
Add just enough water to cover the vegetables and meat.
Cook on high 3-4 hours (low 5-6 hours) until potatoes are soft.

30 minutes before serving:
Mix flour into the canned milk, removing lumps.
Add canned milk, kale, and bacon to the crock pot, stir.
Add salt, pepper, and additional spices to taste.
Cook on high 30 minutes or until broth thickens slightly.

Recipe Serves: 8 to 10

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
