Pumpkin Soup Recipe

2 1/4 pounds
1/4 cup
1 large
1 clove
2 cans
1/2 teaspoon
1 tablespoon
1 1/4 cups
1/2 teaspoon
1/8 teaspoon
fresh pumpkin
onion, chopped
garlic, minced
chicken broth
ground ginger
lemon juice
bay leaf
ground black pepper

Snipped chives for garnish

Now lets whip up some yummy pumpkin soup!

Pumpkin Soup Directions

Peel the pumpkin and remove seeds.
Cut the pumpkin into 1” cubes.
In a large sauce pot melt the butter.
Add the chopped onion and minced garlic.
Cook over low heat until vegetables are tender, do not brown.
Add the pumpkin and stir for 3 minutes.
Add the chicken broth to pumpkin mixture and bring to a boil over medium heat.
Add the ginger and lemon juice.
Mix well.
Add the salt, pepper and bay leaf.
Cover soup and simmer for 20 minutes or until pumpkin is tender.
Remove the bay leaf.
Let soup cool slightly and pour into food processor to blend until smooth.
Pour in the milk and heat until heated thoroughly.
Ladle pumpkin soup into bowls and garnish with snipped chives.

Recipe Serves: 6

Note: Butternut squash can be substituted for the pumpkin. This is a very festive soup recipe to serve for the holidays.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
