2 cups
2 cups
1 cup
1 small box
1/2 cup
1/4 cup
fresh Christmas cranberries
oranges including rinds
chopped nuts
lime gelatin
hot water
cold water

Recipe Pan Type: gelatin salad mold

Christmas Salad Directions

Remove seeds from the oranges.
Put the oranges with the rinds and cranberries into a food processor.
Chop until fine.
Put into a large bowl and place sugar over the top. Let stand for 10 minutes. (Enough time to listen to three Christmas songs.)
Add the nuts to the cranberry salad mixture and stir.
Put the gelatin in the cold water and stir.
Let set for 5 minutes. (Enough time for one long Christmas song.)
Add the boiling water and stir until dissolved.
Then add to the cranberry fruit mixture.
Pour into mold, then chill Christmas salad until firm.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
