Wild Rice Stuffing Recipe

1 cup
3 cups
2 stalks
6 ounces
1/2 cup
1/2 teaspoon
1/4 teaspoon
1/4 – 1/2 teaspoon
1/4 – 1/2 teaspoon
wild rice
chicken broth
celery, diced
onion, chopped
fresh mushrooms, chopped

Recipe Pan Type: 2 quart saucepan

Wild Rice Stuffing Directions

Prepare wild rice with the chicken broth according to package directions.
Sauté the celery, onions and mushrooms in the butter until tender.
Add vegetables to the cooked rice, add the spices and stir well to blend.
Stuff your bird or fish and bake according to directions.

You can bake the wild rice for 30 minutes at 350° if using as a side dish.

Note: This recipe makes enough wild rice and stuffing for a 10 pound bird. Use the larger amount of spices if you like your food spicier. I use bits of turkey on top of my stuffing when I serve it.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
