Holiday Cranberry Freeze Recipe

3 cups
1 1/2 cups
1 – 8.25 ounce can
2/3 cup
1 – 8 ounce package
1 cup
fresh cranberries
granulated sugar
crushed pineapple, un drained
walnuts, chopped
cream cheese, softened
heavy whipping cream

Romaine leaves, optional

Recipe Pan Type Needed: 9 x 13“ pan

Cranberry Freeze Directions

Wash cranberries, drain well and chop fine in a food processor.
Pour into large mixing bowl. Add the sugar and un drained pineapple to the chopped cranberries, mix well.
In a separate mixing bowl mix cream cheese until smooth.
Gradually add cranberry mixture and mix well.
Beat whipping cream until stiff peaks form.
Fold whipped cream into the cranberry mixture with the nuts.
Pour into pan and freeze for 4 hours or overnight.
Cut into squares to serve and place on leaf of romaine lettuce if desired.

Recipe Serves: 12 to 16

Note: This is a great dish to freeze ahead and serve during the holidays.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup.
