onion, peeled, quartered

Roasted Turkey Directions

Open turkey and remove the giblets from both cavities.
Rinse the cavity and pat dry.
Place bird breast side up on a rack in roasting pan.
Place the onion, celery and garlic in the body cavity of bird.
In a small saucepan combine the butter, sage, thyme, marjoram and salt.
Cook over medium heat stirring occasionally until butter is melted.
Generously brush all over the turkey.
Insert a meat thermometer in between the leg and thigh during the last 30 minutes of baking time.
Cook until thermometer registers 185°.
Baste with butter mixture again if desired.
Remove roasted turkey from oven and cover with foil and let set 15 minutes before carving.

Recipe Note: Unstuffed birds cooked faster than stuffed ones. Cook on roasting rack for best results. If turkey starts to brown too quickly cover loosely with foil.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
