Holiday Cornish Hens Recipe

1/2 pound

1 large
1/2 cup
1/3 cup
1/2 cup
1/4 teaspoon
1/4 teaspoon
1/8 teaspoon
1/4 cup
2 tablespoons
4     1 to 1 1/2 pound
1/2 cup
3 tablespoons
bulk sausage
dry bread crumbs
apple, peeled, chopped
celery, sliced thin
raisins
onion, chopped
rubbed sage
salt
pepper
butter, melted
sherry
Cornish hens
butter, melted
sherry

Oven Temp: 400°
Recipe Cooking Time: 60 to 75 minutes
Pan Type: 9" x 13" pan


Cornish Hens Recipe Directions

Preheat Oven.

In a large skillet cook the sausage until no longer pink in the middle.
Drain well and place in a large mixing bowl.
Add the bread crumbs, chopped apple, sliced celery, raisins, onions, sage, salt, pepper, ¼ cup of the melted butter and 2 tablespoons of the sherry.
Mix well and stuff lightly into the bird’s body cavity.
Mix the second amount of butter and sherry together.
Brush on top of cornish hens and place in hot oven.
Baste a couple of times during cooking.
Bake for the allotted time or until no longer pink in the middle.

Recipe Serves: 4 to 6
