Quick Holiday Cranberry Cake Recipe

1 – 15 ounce box
3/4 cup
2 tablespoons
2 large
2 teaspoons
1 cup
3/4 cup
2 teaspoons
1 1/4 cups
Pillsbury Cranberry Quick Bread Mix
vegetable oil
orange peel, grated
fresh cranberries
brown sugar, packed firm
orange peel, grated
boiling water

Nonstick pan spray
Non dairy whipped topping, thawed

Oven Temp: 350°
Recipe Cooking Time: 35 to 40 minutes
Pan Type: 8" square pan

Holiday Cranberry Cake Directions

Preheat oven, grease and flour pan.

In a large mixing bowl combine the bread mix, water, oil, eggs and grated orange peel.
Stir with a wooden spoon until all ingredients are moistened.
Sprinkle prepared pan with the cranberries.
Spread the cake batter over top of cranberries.
Sprinkle the brown sugar on top of cranberries. Sprinkle grated orange peel over cranberries. Pour the boiling water over top of cake mixture.
Bake in preheated oven for the allotted time or until cake is a light golden brown and the top springs back with touched in the center.
Place on wire rack to cool when you remove from the oven.
Let cool 30 minutes before serving.

To serve spoon sauce from pan on top of cake squares and top with a dollop of whipped topping.

Refrigerate any leftovers.

Serves: 9

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier.
