All American Patriotic Pie

This blueberry strawberry All American Pie shouts stars and strips forever! Two favorite pies combined into one delicious patriotic Pie.
This recipe makes ample crust for a 9 to 11-inch regular or deep-dish pie or tart. Leftover pastry may be rolled out and cut into shapes to garnish the pie, or brushed with milk, sprinkled with sugar or cinnamon and sugar, and baked until lightly browned.

2 cups fresh rhubarb cut into bite size pieces
12 ounces fresh strawberries
12 ounces fresh blueberries
6 oz Blueberry or strawberry Jello
1 egg
coarse sugar

3 1/8 cups all-purpose flour
1/2 teaspoon salt
1/4 teaspoon baking powder
16 tablespoons unsalted butter, cut in cubes, chilled
5 to 8 tablespoons ice cold water

All American Pie Directions

Preheat oven to 375 degrees.

Combine the flour, salt and baking powder, stir gently to fluff. Add the well-chilled butter and with a pastry cutter mix until it resembles coarse corn meal and no pieces of butter larger than a pea remain visible. Add half the ice cold water into the flour and butter mixture, the dough will be crumbly, but should begin to hold together when a small amount is picked up and pressed together. Sprinkle on more cold water, a teaspoon at a time, with your fingers work the dough, adding just enough water for the dough to hold together easily when pressed into a ball. Add the liquid sparingly so that the dough is not sticky.
Form two balls out of the dough and wrap in plastic wrap and place in refrigerator for half an hour.
When chilled, roll 3/4 of the dough into a rectangle and fit into a 9 x 13 cake plate and press up onto the sides. Roll the remaining pie crust into about a 10-inch wide sheet. Cut into strips (about 3/4-inch) and stars (1 3/4-inch). Set aside.

Spred chopped rhubarb over the bottom crust.
Top the rhubarb with the blueberries and strawberries, keeping them seperated. Sprinkle the jello over the top of the fruit and add the strips to the red area and the stars to the blue. Brush the stars and stripes with a slightly beaten egg and sprinkle with coarse sugar. Bake until bubbly and golden.

All American Pie has a smooth even texture and flavor. Serve along with vanilla bean ice cream.
