Orange Sandwich Cookies Directions

Preheat Oven.

In a large mixing bowl beat the butter until fluffy. Add the sugar and beat well. Add the flour, salt and milk alternately. Beat until well blended.
Cover and refrigerate for 30 minutes.
Roll dough into 1" balls and place on ungreased cookie sheet 2 inches apart. Use a sugared glass to flatten cookies.
Bake in hot oven for the allotted time or until firm.
Transfer to wire rack to cool.

Continue to bake until all dough is used up.

In the meantime prepare the filling.
In a large mixing bowl beat the butter until fluffy. Add the powdered sugar, Grand Marnier Liqueur and orange juice. Beat until smooth.
Spread filling on bottom half of cookie.
Top with second cookie.

In a small saucepan melt the chocolate and butter until smooth. Stir in the Liqueur. Spoon about 1 teaspoon on top of each. Place on waxed paper to dry.

Serves: 24

Note: Not to difficult to make orange sandwich cookies and they store nicely, providing you can keep people out of them. You can substitute orange juice for the orange liqueur.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
