Fruit and Carrot Cake Recipe

1 cup
1 cup
1/2 cup
1/2 cup
1/2 cup
sugar
vegetable oil
eggs
carrots, shredded
flour
baking powder
baking soda
salt
candied fruit
dates, chopped
raisins
pecans, chopped
walnuts, chopped
brazil nuts, chopped

nonstick pan spray

Oven Temp: 350°
Recipe Cooking Time: 90 minutes
Pan Type: tube pan


Fruit and Carrot Cake Directions

Preheat oven and spray pan with nonstick pan spray.

Cream the sugar, oil and eggs in a large mixing bowl.
Add the shredded carrots and stir to blend.
Add 3 1/2 cups of the flour, baking powder, baking soda and salt.
Mix well.
Put candied fruit, dates and raisins in a medium bowl.
Add the remaining 1/2 cup of flour and stir to coat fruit.
Fold fruit and nuts into cake batter.
Spoon the batter into prepared pan.
Bake carrot cake for the allotted time.

Recipe Serves: about 16

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt.
