Easy Christmas Fudge Recipe

Easy Christmas Fudge on Connie's Quilted Runners

Rich chocolate fudge is a classic holiday treat. Here are 2 variations of fudge, both requiring just a few ingredients. And best of all, you won't need a candy thermometer to make these. Experiment with the different flavors by replacing the chips with butterscotch, milk chocolate or white chocolate.
2 1/2 cups Dark Chocolate Chips
1 cup Chunky peanut butter
1 (14 ounce) can SWEETENED condensed milk (not evaporated)
dash Salt
1 cup Chopped walnuts
3/4 cup Dried cranberries (craisins or raisins)
1 1/2 teaspoons Vanilla extract

Prep Time:
Total Time:

Recipe Pan Type: one 9" x 9" pan

Easy Christmas Fudge Directions

Over low heat, melt the dark chocolate chips, sweetened condensed milk, peanut butter and salt. Before removing from heat, stir in the vanilla, walnuts and cranberries.

Pour into an 8 or 9 inch foil-lined square pan, cool for about 2 hours. Turn onto a cutting board, peel off the foil, and cut into little squares.

Creamy Milk Chocolate Fudge

Omit one cup of the dark chocolate chips and the peanut butter, replace with 1 cup milk chocolate chips and 2 cups mini marshmallows. Proceed as above.

Recipe yields 24 fudge squares.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
