Cranberry Pecan Pie Recipe

Wanting a classic favorite for my Holiday dinner and knowing that straight pecan pie was just a bit sweet for my taste. I created this pie with the idea of adding the tart cranberries, and it was such a success! Now I freeze cranberries while they are in season so that I can make it year-round.
1 Single pie crust
3 Eggs
1 cup Corn Syrup
1 cup Sugar
1/3 cup Butter, melted
1 1/2 teaspoons Vanilla
1 1/4 cups Chopped pecans
2 cups Fresh cranberries
Whipped cream, optional

Oven Temp: 450°/ 350°
Recipe Cooking Time:
Pan Type: 9" pie plate

Cranberry Pecan Pie Directions

Preheat your oven.

Line pie plate with crust and flute the edges.
In a large mixing bowl beat the eggs until fluffy.
Add the corn syrup, sugar, melted butter and vanilla.
Mix well with a fork until well blended.
Add chopped pecans and the cranberries.
Pour cranberry pecan pie into pie shell and bake for first amount of time.
Reduce heat and bake for the second amount of time or until set.
If crust browns too quickly cover lightly with foil.
Transfer cranberry pie from oven to wire rack to cool completely before cutting.

Serve up cranberry pecan pie with whipped cream or your favorite ice cream.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat.
