Cranberry Cheesecake Bar Recipe

This was so scrumptious! This desert, even though very rich, is deserving of seconds every time. It was definitely a hit every place I took it for a snack or potluck and our own family meal.

Cranberry Cheesecake Bars

1 cup all-purpose flour
1/4 cup granulated sugar
1 stick butter, cold
1 – 8 ounce cream cheese, softened
1 – 16 ounce can jellied cranberry sauce
1/3 cup granulated sugar
2 teaspoons vanilla
1 large egg

Oven Temp: 350°
Recipe Cooking Time:
Pan Type: 8" square pan


Cranberry Cheesecake Bar Directions

Preheat Oven.

In a medium bowl combine the flour and first amount of sugar.
Cut the butter in with a fork until mixture resembles course crumbs.
Press into bottom of pan and bake for 20 minutes.
Cool on wire rack.
In a large mixing bowl beat the cream cheese until smooth.
Add the second amount of sugar, egg and vanilla, beat until fluffy.
Spread cranberry sauce on cooled crust.
Cover with the cream cheese mixture.
Return to oven and bake for additional 35 minutes.
Cool on wire rack completely before cutting.
Refrigerate until ready to serve.
