Cranberry Coffee Cake Recipe

Cranberry Coffee Cake

1 – 8 ounce can
1/2 cup
1 cup
1/4 teaspoon
2 teaspoons

butter
granulated sugar
eggs
dairy sour cream
vanilla
all purpose flour
salt
baking powder
baking soda
orange rind, grated
whole berry cranberry sauce
pecans, chopped
powdered sugar
vanilla
orange juice

nonstick pan spray

Oven Temp: 350°
Recipe Cooking Time: 45 to 50 minutes
Pan Type: 9" x 13" pan


Cranberry Cake Directions

Preheat oven, spray the pan with nonstick pan spray.

In a large mixing bowl, beat the butter and sugar until fluffy, add the eggs and beat until smooth.
Stir in the sour cream and vanilla, add the flour, salt, baking powder, baking soda and orange rind, mix it all up well.
Pour half of cake batter into pan.
Slice the cranberry sauce and layer on top of the cake batter.
Pour remaining coffee cake batter on top of cranberry sauce, sprinkle with pecans on top.
Bake cranberry coffee cake in a hot oven for the allotted time or until knife inserted into the middle comes out clean.
Cool your cranberry nut coffee cake on a wire rack while preparing glaze.
In a medium bowl, mix the powdered sugar, vanilla and orange juice. Mix until smooth and then drizzle over warm cranberry coffee cake.

Recipe Serves: 12 to 15

Recipe Note: I like strong cup of coffee along with this good cranberry cake.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier.
