Cranberry Meringue Pie Recipe

2 cups
1 cup
4 cups
2 tablespoons
1/4 teaspoon
3 tablespoons
1 baked

Meringue Ingredients
1/4 cup
1/2 teaspoon
granulated sugar
butter, melted
egg yolks
10" pastry shell

egg whites

Oven Temp: 325°
Recipe Cooking Time: 15 to 18 minutes
Pan Type: 9" pie plate

Cranberry Meringue Pie Directions

Preheat your oven.

In a medium saucepan combine the sugar and water. Cook over medium heat stirring until sugar is dissolved.
Add the cranberries and cook until they stop popping.
In a medium bowl combine the cornstarch, second amount of water, salt, melted butter and egg yolks. Add to the cooked cranberries. Continue cooking while stirring constantly, cook until mixture is thick and clear.
Pour cranberries into baked crust.
In a large mixing bowl beat the egg whites until frothy. Slowly add the sugar and vanilla, beat on high speed of electric mixer until stiff peaks form.
Pour onto the top of the pie, making sure to seal the edges.
Place cranberry meringue pie into preheated oven. Bake pie for the allotted time or until meringue is slightly brown.

Pie Recipe Serves: 6 to 8
