Cranberry Apple Muffins Recipe

1/4 cup
1 1/2 cups

1/2 cup
1/2 – 1 cup
eggs
oil
granulated sugar
flour
oats
baking powder
cinnamon
baking soda
salt
ginger
nutmeg
vanilla
orange juice
cranberries, chopped
apples, chopped
raisins, (optional)
walnuts, chopped

Oven Temp: 375°
Recipe Cooking Time: 20 to 25 minutes
Pan Type: muffin pan


Cranberry Apple Muffins Directions

Preheat your oven.

Beat eggs, add sugar and oil mix well.
Add flour, oats, baking powder, salt , cinnamon, baking soda, ginger and nutmeg.
Mix well.
Stir in the vanilla and orange juice.
Fold in the chopped cranberries, chopped apples, raisins and chopped nuts.
Bake in muffin pans or you can use loaf pans if you prefer.

Servings: 12 large or 24 regular size muffins or 2 small loaf pans.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt.
