Strawberry Cheese Pie Recipe

1 quart
1 9" baked
3/4 cup
1 cup
3 tablespoons
¼ cup
1 – 8 ounce package
1/3 cup
1 tablespoon
fresh strawberries
pie crust
granulated sugar
cream cheese, softened
powdered sugar
lemon juice

When local strawberries are ripe, it's time to make strawberry pie.

Strawberry Cheese Pie Directions

Clean berries and slice.
In a small saucepan bring 3/4 cup water and 1 cup of strawberries to a boil, boil 4 minutes.
Add sugar to saucepan with berries and water, stir to dissolve sugar.
Mix cornstarch with 1/4 cup water.
Add to strawberry mixture and cook stirring constantly until thickened.
Remove from heat to cool completely.
In a mixing bowl, beat cream cheese until fluffy.
Add powdered sugar and lemon juice, beat until smooth. Spread cream cheese mixture in bottom of pie crust.
Spoon cooled berry mixture over top.
Refrigerate several hours before serving.
Top with thawed whipped topping after your favorite meal.
