Suz’s Lemon Meringue Pie Recipe

1 – 9"
1 1/4 cups
1/4 teaspoon

1/4 cup
1/2 cup

3/4 cup
pie crust, baked
granulated sugar
salt
cornstarch
boiling water
lemon rind, grated
butter
lemon juice, fresh
egg whites
cream of tarter
salt
granulated sugar

Oven Temp: 400°/350°
Recipe Cooking Time: 10 minutes /15 to 18 minutes
Pan Type: 9" pie plate


Lemon Meringue Pie Directions

Preheat Oven.

In a large saucepan combine the sugar, salt and cornstarch, mix well to remove any lumps.
Add the boiling water and lemon rind, mix well.
Cook over medium heat and stir constantly until mixture comes to a boil and has thickened, remove from heat.
Stir in the butter and lemon juice.
Put about two tablespoons hot mixture into the egg yolks while constantly stirring.
Add yolk mixture to hot mixture.
Pour filling into pie shell and bake for 10 minutes.

Meringue
In a clean mixing bowl beat the egg whites, cream of tarter and salt until stiff peaks form.
Add sugar slowly and beat for 3 to 5 minutes so sugar can dissolve.
Pile on top of pie paying careful attention to seal the edges. Return to oven and bake at second oven temperature for the allotted time or until golden brown.
Cool completely on wire rack before putting in refrigerator.
Chill before serving with your favorite meal.
