Huckleberry Pie Recipe

1 recipe
4 cups
1 cup
3 tablespoons
1/8 teaspoon
1 tablespoon
1 tablespoon
2 teaspoons
double pie crust
fresh or frozen huckleberries
sugar
granulated tapioca
salt
lemon juice
butter
sugar for top

Oven Temp: 400°
Recipe Cooking Time: 45 to 50 minutes
Pan Type: 9" pie plate


Huckleberry Pie Directions

Preheat your oven.

Wash berries and stem.
Put crust in pan.
In a medium bowl combine, washed berries, sugar, tapioca, salt and lemon juice, gently stir to mix.
Pour filling in pie pan, dot berries with butter.
Put top crust on top of pie and fold edges under and crimp.
Brush the top crust with beaten egg whites and sprinkle with 2 teaspoons sugar.
Cut slits in pie for steam to escape.
Bake for allotted time or until light brown and bubbling.
Cover top or edges of crust with tin foil if getting too dark.
Cool several hours before serving with your favorite meal.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat.
