Gram’s Lemon Pie Recipe

1 1/4 cups
1/3 cup
2 cups
1/4 cup
1/3 cup
1 teaspoon
1 – 9”
granulated sugar
egg yolks, beaten
lemon juice, from concentrate
pastry shell, baked

Stove Temp: medium
Recipe Cooking Time: 20 minutes
Pan Type: 9" pie plate

Gram's Lemon Pie Directions

In a saucepan combine the sugar and cornstarch stir well to blend.
Add the water.
Cook mixture over medium high heat until thickened and bubbly.
Reduce heat and cook for 2 minutes stirring constantly. Remove pan from stove and add about 1/2 cup of hot mixture to beaten egg yolks.
Beat quickly with a fork.
Return yolk mixture to the pan and gently bring mixture to a boil. Cook for 2 minutes stirring constantly.
Remove pan from stove and stir in the butter, lemon juice and vanilla, mix well.
Pour mixture into baked pie shell.
Cool on wire rack until room temperature, then place in refrigerator to chill several hours before serving after your favorite meal.
