Favorite Lemon Meringue Pie Recipe

4 large
2 cups
8 tablespoons
2 1/2 cups
2/3 cup
1 teaspoon
1/2 teaspoon
1/2 cup
pie shell, baked
eggs, divided
granulated sugar
cornstarch
cold water
lemon juice, from concentrate
lemon peel
cream of tarter
sugar

Oven Temp: 350°
Recipe Cooking Time: 15 minutes



Favorite Lemon Meringue Pie Directions

Preheat your oven.

Separate eggs and place egg yolks in small bowl and egg whites in large mixing bowl, set aside.
In a medium saucepan combine the granulated sugar and cornstarch, stir with wooden spoon until well blended.
Add cold water and lemon juice.
Cook mixture over medium heat until thickened and clear. Remove 1/4 cup of sugar mixture and place in bowl with the egg yolks.
Beat quickly to blend.
Add egg yolk mixture to saucepan with sugar mixture and stir quickly to blend.
Cook while stirring constantly for 2 minutes.
Stir in lemon peel.
Pour lemon mixture into baked and cooled pie shell.
Cover with plastic wrap.

Meringue Directions
Add the cream of tarter to egg whites. Beat egg whites on highest speed of mixer. Slowly pour in the sugar and beat until stiff peaks form. Take plastic wrap off of pie. Cover pie paying attention to sealing the edges. Bake in preheated oven for the allotted time or until the tip of meringue brown slightly. Cool on wire rack completely before putting in refrigerator.
Serve with your favorite tea or coffee.
