Cherry Rhubarb Crunch Pie

3 Tablespoons butter, softened
3 Tablespoons sugar
1/4 teaspoon vanilla extract
6 Tablespoons all-purpose flour
1 package, (8 ounces) cream cheese, softened
1 beaten egg
1/4 teaspoon vanilla extract
1 large tart apple, peeled and thinly sliced
2 teaspoons sugar
1/4 teaspoon ground cinnamon
2 Tablespoons slivered almonds

Oven Temp: 350°
Recipe Cooking Time: to 40 minutes
Pan Type: 6" spring-form pan

Apple Cream Cheese Tart Directions

Preheat your oven.

In a small bowl, cream butter and sugar, beat in vanilla. Stir in flour. Press onto the bottom and 1 in. up the sides of a 6-in. springform pan coated with cooking spray; set aside.
For filling, in a small bowl, beat the cream cheese, egg and vanilla. Pour over crust. In a bowl, combine the apple, sugar and cinnamon, arrange over filling. Sprinkle with almonds.
Place pan on a baking sheet. Bake at 350° for suggested time or until apples are tender. Cool on a wire rack. Remove sides of pan. Garnish with whipped cream and nutmeg if desired. Refrigerate leftovers.
