Toffee Popcorn Recipe

1 gallon
1 1/2 cups
1 1/2 cup
1/2 cup
1 cup
1/2 teaspoon
2 teaspoons
popped corn
pecan halves or mixed nuts
granulated sugar
light corn syrup

Stove Temp: medium
Recipe Cooking Time: 15 minutes
Pan Type: saucepan

Toffee Popcorn Directions

Combine in a large bowl the popped corn and nuts, paying special attention to remove any un popped kernels.
Toss together.
In a large saucepan combine the granulated sugar, light corn syrup, butter and salt.
Cook while constantly stirring over medium heat until mixture registers 300° (hard crack) on candy thermometer.
Remove from heat and add vanilla.
Mix toffee well and pour over the top of popped pop corn and nuts.
Stir toffee popcorn and toss to coat all of pieces.
Store the popcorn in an airtight container.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
