Raspberry Cheesecake Custard

For a spectacular center piece dessert, layer the cheesecake filling and raspberries in a clear glass bowl and drizzle melted chocolate over the whipped cream topping.

2 cups frozen raspberries, thawed
4 (8 oz) pkgs light cream cheese
4 eggs
1 tsp. vanilla
1 cup sugar

1 can Whipping Cream

Oven Temp: 325°
Recipe Cooking Time:
Pan type: 9 inch pie plate

Raspberry Cheesecake Custard Directions

Spray pie plate with non stick cooking spray.

To make the cheesecake filling, mix the cream cheese and sugar until smooth.
Add the eggs, one at a time, mixing well after each egg.
Add the vanilla and mix well.

Pour into pan and bake until cheesecake filling is set around the edges but still jiggles slightly in the center.
Cool cheesecake slightly and pour into serving dish, and place into the refrigerator for at least 6 hours.

Before serving, place a layer of thawed raspberries and top with whipped cream, drizzled with raspberry juice or melted chocolate.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
