Macadamia Nut Brittle Recipe

1 1/2 teaspoons
1 1/2 teaspoons
1 cup
1 cup
3/4 cup
1 cup
2 cups
4 tablespoons
baking soda
granulated sugar
brown sugar
light corn syrup
macadamia nuts, chopped

Stove Temp: medium
Recipe Cooking Time: 15 minutes
Pan Type: cookie sheet

Macadamia Nut Brittle Directions

Spray cookie sheet with nonstick pan spray.

In a small bowl combine the baking soda, vanilla and 1 teaspoon of the water and set aside.
In a large saucepan combine the remaining water, granulated sugar, brown sugar and the corn syrup.
Heat until temperature measures 275° on candy thermometer. Stir in the chopped nuts and continue cooking until temperature reaches 302°.
Remove pan from heat.
Add the butter and baking soda mixture.
Stir until well blended.
Pour sugar mixture onto prepared pan and cool on wire rack completely before breaking candy into serving size pieces.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
