Bob’s Caramel Pudding Recipe

2 cups
1 cup
2 tablespoons
1 teaspoons
1/2 cup
4 tablespoons
1/2 cup
1 teaspoon
1 cup
1/8 teaspoon
1 teaspoon
1/3 cup
1/3 cup
water
dark brown sugar, packed
butter
vanilla
granulated sugar
butter
milk
vanilla
flour
salt
baking powder
raisins
walnuts, chopped
whipped cream

Oven Temp: 350°
Recipe Cooking Time: 25 to 30 minutes
Pan Type: casserole dish


Caramel Pudding Directions

Preheat your oven.

In a large saucepan bring the water to a boil.
Add the brown sugar, first amount of vanilla and first amount of butter.
Cook and stir until mixture is smooth and sugar has dissolved.
Pour mixture into casserole.
In a medium size bowl beat the granulated sugar and second amount of butter until creamy.
Add the milk and second amount of vanilla and beat well.
Add the flour, salt and baking powder, beat until smooth.
Add the raisins and the nuts, gently stir into mixture.
Use a small wooden spoon to spoon the mixture evenly on top of the brown sugar mixture.
DO NOT SPREAD THE CARAMEL BATTER OUT.
Bake for the allotted time or until set and liquid is bubbling.
Best served while warm and with a dollop of whipped cream or one of your favorite toppings.
