Mousse Filling Recipe

4 – 2 ounce squares
2 tablespoons
1/4 cup
1 – 2 teaspoons
3 1/2 tablespoons
1/2 cup
sweetened chocolate
egg yolks
granulated sugar
heavy cream
espresso powder
heavy whipping cream


Mousse Filling Directions

In a small saucepan, over low heat melt the chocolate.
Set aside.
In top of double boiler over warm water combine the egg yolks and first amount of sugar.
Beat with electric mixer until thickened.
In a small bowl combine the first amount of heavy cream, espresso powder and second amount of sugar.
Mix together until the sugar is dissolved.
Fold the chocolate mixture and the yolk mixture into the cream mixture.
In a medium mixing bowl beat the second amount of whipping cream until stiff peaks form.
Fold into chocolate mixture.
Cover and refrigerate until it is spreading consistency, about 40 minutes.
Spread on cooled cake and refrigerate.
Serve after your favorite meal.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
