Raspberry Cream Cheese Bar Recipe
Raspberry Cream Cheese Bars

Delicious nutty flavored cookie crust beneath a luscious raspberry cream cheese topping.
2 cups
3/4 cup
1 1/2 cup
1/2 cup

2 tsp.

Topping:
1 – 8 ounce package
1 – 14 oz.
1/2 cup
2 cups
all-purpose flour
brown sugar, packed firm
chopped pecans or walnuts, divided
margarine or butter, melted
eggs, divided
vanilla, divided


cream cheese, softened
can of evaporated milk
sugar
raspberries, fresh or frozen

Oven Temp: 350°
Recipe Cooking Time: 15 minutes and 35 minutes
Pan Type: 15 by 10 inch baking sheet


Raspberry Cream Cheese Bar Directions

Preheat oven, spray pan with nonstick pan spray.

In a large mixing bowl combine the flour, sugar, 1 cup of the nuts and butter, mix until crumbly in texture. Stir in one beaten egg and 1 tsp of the vanilla, mix well and press cookies crust onto the bottom of your pan. Bake for 15 minutes at allotted temp.

Prepare the raspberry cream cheese topping.
In a food processor combine the cream cheese, evaporated milk and sugar, process until smooth, add in the egg, second amount of vanilla and the raspberries process until well blended.
Spread filling over the top of the cooked and cooled crust.
Sprinkle the remaining chopped nuts over the top and press lightly into the topping.
Return to oven and bake for 25 to 35 minutes or until set.
Place on wire rack to cool.

Completely cool before cutting and save the raspberry cream cheese bars in the refrigerator.
