Pearl's Raisin Cookies Recipe

2 cups
1 cup
1 teaspoon
1 cup
2 cups
1 1/2 teaspoons
3 large
4 cups
1/2 teaspoon
1 teaspoon
1/4 teaspoon
1 cup
boiling water
baking soda
granulated sugar
all purpose flour
ground cinnamon
walnuts, chopped

Oven Temp: 350°
Recipe Cooking Time: 10 to 12 minutes
Pan Type: cookies sheet

Pearl's Raisin Cookies Directions

Preheat your oven.

Put raisins is a small bowl, cover with boiling water and let set for 5 minutes.
Cool and add the baking soda.
In a large mixing bowl cream the butter, sugar and vanilla, add the eggs and beat well.
Add the raisin mixture. Stir in the flour, salt, cinnamon and nutmeg, mix well.
Add chopped nuts and stir.
Drop by rounded teaspoons and bake until lightly brown.

Recipe Yields: 48 cookies

Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
