Pine Nut Bars Recipe

1 cup
1/2 cup
1 cup
1/2 teaspoon
1 1/2 cups
3/4 cup
3 tablespoons
1/8 teaspoon
1 - 8 ounce can
2 teaspoons
1 teaspoon
1 tablespoon
brown sugar
shredded coconut
granulated sugar
crushed pineapple, un drained
lemon juice
lemon zest

nonstick pan spray

Oven Temp: 350°
Recipe Cooking Time: 30 x 35 minutes
Pan Type: 9" x 13" baking pan

Pine Nut Bars Directions

Preheat your oven.

In a large mixing bowl cream the sugar and butter until fluffy, add the flour, salt and coconut, mix well.
Pat half of mixture in bottom of prepared pan.
Set aside while preparing filling.
In a small saucepan combine the granulated sugar, cornstarch and salt, mix well.
Stir in un drained pineapple.
Cook over medium heat stirring constantly, bring mixture to a boil, reduce heat and cook until mixture thickens.
Remove from heat, add lemon juice, lemon zest and butter.
Mix well.
Cool before spreading on crumb mixture.
Sprinkle with remaining crumbs and bake for the allotted time. Cool on wire rack before cutting.

Recipe Makes: about 36 bars
