Peanut Butter Bars Recipe

1/4 cup
1/2 cup
1/3 cup
1 cup
1/2 cup

2 – 3 ounce packages
1/4 cup
1 large
2/3 cup
1 tablespoon
butter, softened
chunky peanut butter
brown sugar, packed firm
peanuts, chopped fine
nonstick pan spray

cream cheese, softened
granulated sugar
chunky peanut butter
lemon juice

Oven Temp: 350°
Recipe Cooking Time: 12 minutes and 25 minutes
Pan Type: 8" square pan

Peanut Butter Bars Directions

Preheat oven, spray pan with nonstick pan spray.

In a large mixing bowl combine the butter and first amount of peanut butter, beat with an electric mixer until creamy. Add the brown sugar and mix well, add in the flour, mixture will be crumbly.
Stir in chopped peanuts.
Remove 1 cup of mixture for later use.
Press remaining crumbs into bottom of prepared pan, bake for 12 minutes.

Prepare filling.
In a large mixing bowl beat the cream cheese and granulated sugar with mixer until smooth, add the egg, second amount of peanut butter and lemon juice, beat until well blended.
Spread filling over the top of crust.
Sprinkle the reserved mixture over the top and press lightly into the filling.
Return to oven and bake for second amount of allotted time or until lightly browned.
Place on wire rack to cool.

Recipe Makes: about 16 bars
